The BEST Healthier Protein Banana Bread

Happy OCTOBER!

October is one of my favorite months of the year. I love the fall colors, the pumpkin everything, the cooler weather, the start of the holiday season, and more baking! I'm also looking forward to a month of a little less busy. The last few months have been quite busy with moving, new routines, and my business. All good things, but I'm ready for some slower paced days ahead.

Coffee and breakfast on the patio this morning with my favorite little girl was the BEST way to start this Monday and kick off this slower paced month! The weather is cooling off and our landscaping is (almost) finished, so now we can enjoy our yard a little more. Hooray for that!

I must tell you about this amazing banana bread that both my daughter and I devoured for breakfast. It's higher in protein than your average banana bread, but it doesn't taste like it in the least! Here's the recipe:

Protein Banana Bread

Ingredients:

3 mashed ripe bananas

1 egg

1/3 cup coconut oil

1 tsp vanilla

1/2 cup brown sugar

1 1/2 cups @kodiakcakes Power Cakes Mix

1/4 tsp salt

Directions: Preheat oven to 350* F. Lightly grease a loaf pan with coconut oil or cooking spray. Stir all ingredients in a bowl until mixed together well. Pour into loaf pan and cook for 35-40 minutes or until knife comes out clean.
